Pasta alla Norma
Chef Nic puts his spin on this traditional Italian pasta dish. Alla Norma originated in Sicily, Italy, as a macaroni or rigatoni dish paired with aubergines, tomatoes & topped with a light snow cap of ricotta salata. Chef Nic creates a warm, rustic, hearty meal by using a shortened bucatini noodle and adding fragrant herbs like fresh basil and oregano and a hint of spice from crushed red pepper. We recommend an equally rustic glass of pinot noir like 2017 Seven Springs.
